Ingredients

Turkey meatballs

  • 2 potatoes, peeled and chopped (about 12 oz/360 g)
  • 1 lb lean ground turkey (500 g)
  • 1 garlic clove minced
  • 3/4 cup soft breadcrumbs (175 mL)
  • 1/4 cup chopped onion (60 mL)
  • 3 Tbsp chopped walnuts (45 mL)
  • 1 egg lightly whisked
  • 3 Tbsp chopped parsley leaves (45 mL)
  • 1 Tbsp canola oil (15 mL)

Braised apples

  • 1 Tbsp canola oil (15 mL)
  • 1/4 cup red pepper finely chopped (60 mL)
  • 1/4 cup onion finely chopped (60 mL)
  • 1 large parsnip finely chopped
  • 2 firm apples peeled and thinly sliced
  • 1/2 cup apple juice (125 mL)

Directions

  1. In a bowl, combine all ingredients except oil. Shape into 1 inch (2.5 cm) meatballs.
  2. Heat canola oil in a saucepan over medium heat and cook meatballs until nicely browned and juices run clear, about 10 minutes. Set aside.
  3. Heat canola oil in a saucepan over medium heat. Sauté red pepper, onions and parsnip for 1 – 2 minutes.
  4. Add apples and continue to cook until apples soften slightly, about 10 minutes. Add apple juice and simmer, uncovered, about 10-15 minutes, to slightly reduce liquid.
  5. Add reserved meatballs to the pan and heat through, about 5 – 10 minutes.
