Ingredients

1 tbsp olive oil15 mL
1/2 cupchopped onion125 mL
3/4 cupdiced carrot175 mL
3/4 cupdiced potato175 mL
1 cupyellow split peas250 mL
4 cupssodium reduced chicken broth1L
1/3 cupdiced lean cooked ham75 mL
1bay leaf1
1/8 tspground black pepper0.5 mL

Directions

Step 1

In large saucepan, heat olive oil over medium-high heat and add onion, carrot and potato. Sauté until vegetables are tender.

Step 2

Add split peas, broth, ham and bay leaf.

Step 3

Bring to boil; reduce heat; cover and allow to simmer for about 45 to 60 minutes or until peas are tender and soup has thickened. Stir occasionally. Remove bay leaf. Add pepper just before serving.
